When you think breakfast – you rarely think vegetables but this was an awesome spin on breakfast options. I think the trick to this dish is that the sweet potato and carrots provide a level of sweet. The veggie spice / seasoning gives salty and the onions give savory. Finally to round this off – the brussels sprouts give a level of salty / savory and crunchy. There’s some work timing the ingredients so they all finish at the same time – but this was an awesome breakfast dish.
