I’m not going to reinvent the wheel here with this recipe. The truth is any base cake recipe will work for this cake. What makes it special is the icing and the sprinkles – and of course presentation. This recipe works with any base vanilla cake. Instead of doing the traditional cream cheese frosting, we will do an almond lemon icing. Which by the way – if you haven’t tried – almond flavoring and lemon flavoring are epic together.  I made this cake for my kids this Valentines day.

Instructions

Bake a basic vanilla cake – it should fit into 2 9-inch pans

Using a large and smaller heart shaped cookie cutter – cut out  2 hearts.

Now to ice this cake!

This cake doesn’t use traditional frosting. Instead I made the type of icing you’d use on cookies.

Pretty much :

2 cups powdered sugar

1 teaspoon of almond extract

2 tablespoons of milk

Lemon zest from 1 lemon

The juice from one large lemon

Mix that up until you have an icing that you like. This is not an exact science – so you can add powdered sugar and milk until you get the consistence you want.

Once that’s done – you can use a spoon to basically glaze the cake.

Once glazed  – top with sprinkle hearts.
